Meat Sauce:
1 lb mince meat
1 small onion, finely chopped
1/3 cup red wine
1 can tomato paste
1 tablespoon oil
salt & pepper
Cream Sauce:
4 cups of warm milk
3/4 cup of flour
salt & pepper
1 cup of grated cheese (preferably
parmesan)
1 packet of macaroni (long tubes)
1 teaspoon of salt
Instructions:
In a saucepan, add the oil and
heat. Stir in the onion and mince meat and cook
until brown.
Add the tomato paste, salt,
pepper and red wine. Stir for a few minutes,
turn heat down low and leave to simmer for 30
- 40 minutes.
*Tip: Use sweet
wine to give a great taste and distinct aroma.
In a separate saucepan melt
the butter over a medium heat, add in the flour
and stir for 1 minute.
Add in the milk, whilst stirring,
until the sauce is thick. Add salt and pepper
to taste, remove from heat and add cheese. Leave
to one side.
Take a large saucepan of water
and add a pinch of salt. Bring to the boil and
cook macaroni until tender. Drain well.
*Tip:At this point,
pre-heat oven to 170 oC
Grease a baking pan with a teaspoon
of oil and add half the macaroni, ensuring that
it completely covers the bottom of the pan.
Sprinkle with cheese and cover with the meat
sauce.
Sprinkle with more cheese then
add rest of macaroni. Cover this layer of macaroni
with the cream sauce and finish with the rest
of the cheese.
Cook "macaroni
pie" in oven for 1 hour or until top of
pie goes golden brown. Allow to cool and serve
in square pieces.
